What is Rebaudioside-A?

Rebaudioside-A, also known as Reb-A, is a steviol glycoside found in the leaves of the Stevia rebaudiana plant, which is also referred to as sweet herb.

Why does the Stevia plant taste so sweet?

Along with stevoside, Rebaudioside-A is one of the main components contributing to the sweetness of Stevia leaves. Depending on the growing region and plant variety, 7-10 different steviol glycosides may be present.

Other steviol glycosides found in Stevia leaves, though in much smaller quantities, include Rebaudioside-C, Rebaudioside-D, Rebaudioside-E, Rebaudioside-F, Rebaudioside-M, Dulcoside-A, and Rubusoside.

Rebaudioside-A is particularly notable because, unlike stevoside, it does not have a bitter aftertaste and is the purest and sweetest of all the steviol glycosides. Products with 98% purity of Rebaudioside-A currently represent the highest concentration of this compound and are of exceptional quality.

As the sweetness of Rebaudioside-A is many times that of sugar, it should be used sparingly. In Paraguay, the native country of the Stevia plant, it is also known as honey herb or sweet herb due to its intense sweetness.

Approval of Stevia as a sugar substitute in the EU

Since December 2011, Stevia has been approved as a new sweetener in the EU. This is regulated in the "Regulation on the approval of steviol glycosides as sweeteners" (Regulation (EU) No 1131/2011).

Numerous products such as foods, beverages, sweets, chocolate, and ketchup are already sweetened with Stevia. You can identify this in the ingredient list of these products by the indication of steviol glycosides or the designation "E 960", which indicates the use of Stevia as a sweetener. What to look out for when purchasing Stevia products!
